Red Velvet Cake

Someone told me recently that their favorite cake of all time is red velvet, but they never see it around except at Christmas. Here is the recipe, and you can decorate and use for all holidays if you wish. This recipe comes from a favorite of mine – The Georgia Cookbook.

Recipe

2 1/2 half cups all-purpose flour

    1 teaspoon soda

    1 teaspoon salt

 1  1/2 cups sugar

    1 cup buttermilk

 1 3/4 cup vegetable oil

    2 eggs

    1 teaspoon vanilla

    2 ounces red food coloring 

    1 teaspoon vinegar

Sift dry ingredients together.  Cream sugar, buttermilk, oil and eggs.  Blend dry ingredients into liquid ingredients.  Add vanilla, food coloring  and vinegar.  Turn into 3 greased and floured 8 inch pans. Bake in preheated 350 degrees F for 30-35 minutes. Cool and frost.  

Frosting:

1 package (8ounces) cream cheese, softened 

1/2 cup butter, softened

1 box  (1 pound) 4X sugar (minus 1/2 half cup)

1 teaspoon vanilla 

Mix all ingredients except vanilla in the mixer until smooth.  Add vanilla and mix well. Smooth on cooled cake.

I loved to bake as a teenager and was happy that my daughter Catherine enjoyed baking and decorating cakes and cookies. Her artistic abilities far surpass mine! She and our neighbor had fun making this beautiful cake one Christmas Eve.
